Diet Potato & Tuna salad

a very fresh and light dish to eat well and get prepared for the beach!

Serves 2
2 big potatoes
1 package of tuna in oil
1 package of canned corn
200 grams of rice (basmati)
1 handful of chopped parsley
2 spoons of olive oil
10 dl of soy milk

Calories percserving: 287

Skin, dice and boil (or steam) the potatoes. Cook the rice folowing the package directions.In a big bowl mix the potatoes, the rice, tuna and corn. Add the oil, salt & pepper to taste, the parsley and the soymilk. Amalgamate and refrigerate to chill.

Tip: you can substitute tuna with bacon or eggs!
