"Got my Period" Diet Risotto



This is my "got my period" risotto. Red chicory is rich in iron, magnesium and zinc and I'm naturally starving for it when my period is coming.
It is also depurative and diuretic, so it will help you feel less puffy.
And you won't believe how few calories it gives!

Ingredients:
Serves 2
  • 1small red chicory chopped
  • 1 tablespoon of extravirgin olive oil
  • 1/2 scallion chopped
  • 1cup of brown rice
  • 1/2 lt of vegetable broth (stock cube is ok)
  • 2 tablespoons of grated parmisan cheese
calories per serving: 210

Prepare a vegetable broth and keep it hot.
In a large pan (or wok) brown the chopped scallion, then add the red chicory, a pint of salt and let cook for 1-2 minutes. Add the rice and, one at the time, some scoops of the broth. Stir costantly checking, every time the broth is absorbed, if the rice is completely cooked.
Once the rice is cooked let the remaining broth be absorbed and season the rice with the parmesan cheese.
Serve and enjoy!
