Halloween Scary Low Cal Pumpkin Soup

don,t just carve pumpkins for halloween... eat them!

did you know that pumpkins are incredibly rich in vital antioxidants, and vitamins?
And they are so low in calories!
this means they are good for skin, eyes, nervous system, bones, and so on.
Here is one of my favotite Halloween recipes:

serves 4
calories per serving: 460
  • 2 lb pumpkin
  • 7 oz potatoes
  • 2 tablespoons extravirgin olive oil
  • 1/2 scallion
  • 1 vegetable stock cube
  • 1 tablespoon wholewheat flour
  • 1 cup brown rice
  • 1 spoon chia seeds
  • 1 spoon curry powder


dice the pumpkin and the potatoes.
in a large saucepan make the scallion brown in the olive oil. then add pumpkin and potatoes. let them brown for 5 minutes.
In the meantime place a vegetable stock cube in 4 gallons of water and bring it to boil.

Add a tablespoom of wholewheat flour to the pumpkin and let if brown for other 5 minutes.
Add the stock, cover and let cook for 15-20 minutes, or until the pumpkin is tender.
In the meantime cook 1 cup of brown rice, following packaging directions.
With an electric mixer puree the pumpkin.
Now add spices and super nutrients: a tablespoon of chia seeds (these will help the soup thiken) and 1-2 spoons of curry powder.
Place the soup on the stove again (medium heat) for 5 minutes.
Serve hot adding a big spoon of brown rice to each bowl.
