Super Healthy & Super Light Salmon Crepes

Want something special for tonight? don't want all the calories of a gourmet dinner?
here is a great dish for your relish!

calories per serving: 654 calories

prepare the bechamel: in a small pot put a glass of skim milk, add 1 tablespoons of extravirgin olive oil and make it warm for 2-3 minutes, add two big tablespoons of wholewheat flour and mix well, let cook until it boils always stirring with a wood spoon. When it starts to boil, continue stirring for other 5 minutes. It will probably be full of lumps... don't worry, that's what electric mixers are for. So when you've mixed up well, add a pinch of salt and some grated nutmeg (as you like).

Now go on preparing crepes: in a bowl mix 3,5 ounces of wholewheat flour, 7 oz of water, 1 teaspoon of salt, 1 teaspoon of sugar, 3 eggs and 1 teaspoon of extravirgin olive oil. 
Preheat a small pan, use a brush to oil it and then pour 4 tablespoons of the mix, letting it spread all around the pan. Let the crepe cook for 2-3 minutes per side. You should get aproximately 6-8 crepes.

cut 3,5 ounces of smoked salmon in strips.

Now put it all toghether. In the middle of each crepe place a small amount of bechamel and 1/6 part of the sliced salmon. Wrap the crepe and place it on a baking tray. Once you've placed all the crepes one next to the other, cover them with the remining bechamel. Place the tray in a pre heated oven (350 F) for 15 minutes.
