Veggie Diet Burrito



All the veggie benefits, omegas from avocado, proteins from beans and healthy wholewheat carbs. A great tex-mex healthy option!

Serves 2

1 spoon extravirgin olive oil
1 chopped carrot
1/2 scallion
1 green pepper, cubed
15 cherry tomatoes
1 avocado, sliced
1 can red beans
2 slices organic cheddar cheese
Salt & pepper
1 pinch chili powder
2 wholewheat tortillas

Calories per serving: 490

Brown the scallion and the carrot in the olive oil. Add the green pepper, 1/4 glass of water, cover, and let cook for 10 minutes. Add the tomatoes and let cook until the peppers are tender, if necessary add more water.
Add salt and pepper as needed.
Mash the avocado adding a pinch of salt and the chili powder.
At least, place the beans mix on one tortilla, add the avocado and top with the chopped cheese. If you like microwave for a few seconds to get the cheese melted.
